An oroshigane or oroshiki is a Japanese style grater used for grating ingredients of types of recipes. In comparison to their Western style counterparts, oroshiganes produce a much finer grating and hence suitable for food requiring the high fineness of results such as wasabi or yamaimo. Typically, an oroshigane features a tin-coated copper plate with small metal spikes, and a large handle often with a small hole for easy storage. High-end versions for the use of professional chefs are a wooden board covered with shark skin.
